Minutes 00:10
  • 100
    diced bacon
  • 15
    maple syrup
  • 50
    Maldon salt

Preheat the oven to 200°C.

Place the bacon on a baking tray that is lined with baking paper or foil. Lining the tray will just make cleaning up easier at the end. Grill it in the oven for 25 minutes until golden and crisp.

Drizzle the syrup on top and place it back in the oven for another 5 minutes. Remove it from the baking tray and leave it to cool. Once cooled, place it in a food processor and blend until fine. It should look like fine bread crumbs.

Stir in the salt and place it in a sterilized jar. Store it in the fridge until ready to use. Makes 1 cup.

Tip: It adds great flavour to fried eggs, roasted chicken or pasta dishes.
