Ingredients (12)

bananas — peeled
30 ml peanut butter — smooth
salt — just a pinch
15 ml chia seeds
30 ml gluten-free flour
egg whites — whisked until fluffy
60 ml — (optional)
250 ml yoghurt — plain
banana — sliced
5 ml chia seeds
fresh mint — to garnish

Method:

1 PANCAKES

Mash the bananas
into a smooth paste
and mix well with the
peanut butter, salt,
chia seeds and flour.
Fold the fluffy egg
whites into the
banana mixture.

2 Heat a little oil in
a non-stick pan and
add 2-3 spoonfuls of
pancake batter.

3 Fry over medium
heat for 1-2 minutes,
carefully turn over and
fry until done. Remove
from the pan and
repeat with the rest
of the batter.

4 TO SERVE

Spread more peanut
butter (if using) on
each pancake.
Spoon a dollop
of yoghurt on top
and add the banana
slices. Sprinkle the
chia seeds over and
garnish with mint
