Ingredients (6)

1/4 watermelon — chopped
500 ml rooibos tea — strongly brewed and cooled
100–200 ml sugar syrup
1 lemon — sliced
watermelon — sliced, to serve
fresh thyme — or mint, to serve

Method:

Juice the watermelon pieces or blend them and strain through a sieve.

Mix the watermelon juice with the rooibos tea and add sugar syrup to taste. Add the lemon slices and refrigerate until ready to serve.

Serve with extra slices of watermelon, thyme or mint sprigs and plenty of ice.
