Ingredients (8)

4 noodles
5 asparagus — chopped
1 salmon fillets — cut into pieces
1 sesame oil
lime — zest and juice
1/4 tsp salt and freshly ground black pepper
4 cucumber — peeled, chopped
1/2 avocado — chopped

Method:

Cook the noodles in boiling water and then strain them.

Place the asparagus in the same boiling water and cook for about 2 minutes, then rinse under cold water.

Heat the pan on a medium heat and cook the salmon on both sides, for about 3 minutes on each side.

To make the vinaigrette, whisk together sesame oil, lime juice and the zest, salt and pepper in a small bowl.

Add the asparagus to the noodles and mix in the vinaigrette. Then add the avocado and cucumber and toss it all together.

Just before serving, add the cooked salmon. It is best when it is served warm.
