Ingredients

  • 200
    g
    courgettes, sliced into ribbons and tossed in a little olive oil
  • 1
    small red onion, sliced and soaked in 2 T (30 ml) red wine vinegar
  • 100
    g
    baby spinach
  • 100
    g
    chevin, broken into pieces
  • 1/2
    cup
    pomegranate rubies
  • DRESSING:
  • juice and zest of 1 orange
  • 3
    Tbs
    extra virgin olive oil
  • 2
    Tbs
    white wine vinegar
  • 1
    Tbs
    honey
  • 1
    tsp
    grated fresh ginger – optional
  • salt and pepper to taste
 

Method

 
Grill the courgette ribbons on a hot griddle pan. This will take a few seconds per side. Set aside.
Combine the dressing ingredients together and season to taste.
Arrange the baby spinach leaves, onion slices, grilled courgettes, chevin and pomegranate rubies in a salad bowl and give the ingredients a gentle toss.
When ready to serve, drizzle with dressing or serve on the side.
