Ingredients (11)

200 g courgettes — ribbons
1 red onion — sliced, soaked in red wine vinegar
100 g baby spinach
100 g chevin — pieces
1/2 cup pomegranate rubies
DRESSING:
orange — zest and juice
3 Tbs olive oil — extra virgin
2 Tbs vinegar — white wine
1 Tbs honey
1 tsp fresh ginger — grated
salt and freshly ground black pepper — to taste

Method:

Grill the courgette ribbons on a hot griddle pan. This will take a few seconds per side. Set aside.
Combine the dressing ingredients together and season to taste.
Arrange the baby spinach leaves, onion slices, grilled courgettes, chevin and pomegranate rubies in a salad bowl and give the ingredients a gentle toss.
When ready to serve, drizzle with dressing or serve on the side.
