Slice your selection of chosen veggies (suggestions: carrot, turnip, radish, cauliflower, broccoli, cucumber) – besides cabbage – with a vegetable peeler.
Place in a well-sealing glass jar and top with the pickling liquid until filled to the top.
Place in the fridge and leave (at least) overnight, or up to two weeks.
Add pickles to a simple cheese sandwich.
Makes a good hostess gift.
Place all ingredients in a bowl and stir until the sugar and salt is dissolved.
NOTE: If using radishes, if left for longer than a day, they will likely turn your entire jar of pickle a gentle pink.
