Barbecue and paprika chicken with gremolata

Minutes 10 min + 30 min marinating time
  • 4
    barbeque spice
  • 4
    smoked paprika
  • salt and pepper to season
  • olive oil to rub chicken pieces
  • 6
    chicken thighs
  • 1
    finely chopped parsley
  • zest of one lemon
  • 1 – 2 garlic cloves, finely chopped and minced
  • roasted corn to serve
  • mixed vegetables to serve


10 min + 30 min marinating time

First off, in a mixing bowl, combine the spices and seasoning. Rub the chicken pieces with olive oil and spice mixture. Refrigerate for 30 minutes. Or, do this the morning before.

Preheat oven to 180°C.

Arrange chicken pieces in an oven safe dish and roast in the oven for 40 – 45 minutes.

For the gremolata; in a mixing bowl, combine the chopped parsley, lemon zest and crushed garlic.

Serve chicken pieces with gremolata, corn and vegetables.
