Savoury polenta pots

Ingredients (5)

4x250 boiling water salt and freshly ground black pepper
250 ml maize meal — polenta
30 ml butter
250 ml pecorino cheese
45 ml pesto — basil and sundried tomato

Method:

Make stiff polenta and leave it to set in bowls. Serve it at
your next braai as a stylish alternative to a big pap pot.

1. Grease 6 moulds with non-stick spray.

2. Pour the water into a saucepan and add a pinch of salt.
Gradually sprinkle the polenta over the boiling water while beating
continuously. Cover and simmer gently for 10 minutes, stirring occasionally.

3. Stir in the butter and pecorino cheese and season with
salt and freshly ground black pepper.

4. Divide the mixture in half and stir the basil pesto
through one half and the sundried tomato pesto through the other.

5. Spoon the polenta into separate moulds. 6 Serve as a side
dish with braaied meat.
