Parma ham wrapped asparagus with yoghurt dip

Ingredients (10)

10-12 asparagus
30 ml olive oil salt and freshly ground pepper
4 slices parma or black forest ham
DIP
125 ml full-cream plain yoghurt juice and grated zest of 1 lemon
1 fresh chillies — chopped
60 ml mixed fresh herbs — chopped
1 garlic — cloves, crushed
30 ml olive oil salt and freshly ground pepper
to serve — to serve

Method:

1. Snip the hard tips off the asparagus stalks and put the rest of the stalks in a bowl. Cover with boiling water and let them stand for 10 minutes. Drain and allow to cool.

2. Drizzle the olive oil over the asparagus and season with salt and freshly ground pepper.

3. Wrap slice of ham around 2-3 asparagus stalks. Repeat until you’ve used all the asparagus and ham.

4. Dip Mix all the ingredients well and season with salt and freshly ground pepper.

5. Serve the ham-wrapped asparagus stalks with the dip and extra fresh herbs, if using.
