Watermelon and lime slush

Serve the frozen cubes in a hollowed-out watermelon – ideal for those sweltering days.

Ingredients (5)

100 g castor sugar
600 g watermelon — deseeded and cubed
limes
vodka
lime — wedges

Method:

Bring the castor sugar to the boil in 250ml water, stirring until the sugar has dissolved. Set aside to cool. Purée the watermelon and transfer 500ml of it to a measuring jug. Mix the purée, lime juice and cooled syrup, spoon into ice trays and freeze overnight.

To Serve:
Turn fruit cubes out into glasses and top with a little vodka. Garnish with lime wedges and serve.

TIP:
Substitute rosewater for vodka – or blend various berries with the watermelon.
