Roasted butternut salad with toasted seeds

  • 1
    butternut, cut into chunks
  • 15
    ml
    olive oil
  • 2
    cup
    washed frilly lettuce
  • 3
    Tbs
    mixed seeds, toasted
  • sour cream to serve
 

Method

First off, place your butternut in an oven safe dish and drizzle with olive oil. Roast in the oven for 40 minutes until soft. Leave to cool.

Arrange the salad leaves on plates and top with butternut. Sprinkle with toasted seeds. Serve with sour cream.
