Orange and dark chocolate cupcakes

    softened butter

    cold milk
  • 1/2
    cup
    orange juice
  • 1,5

    sugar
  • 4
    large eggs
  • 2
    tsp
    vanilla essence
  • 1/4
    tsp
    salt
  • 4
    tsp
    baking powder
  • 3
    cup
    flour
  • 1
    cup
    dark chocolate chips
  • 2
    tsp
    orange zest
  • 2
    180 gr 70% dark chocolate
  • 1
    cup
    cream
  • orange zest to garnish
  • spun sugar to garnish

Preheat oven to 180 °C.

In an electric mixer add the butter, milk, orange juice, sugar, eggs, vanilla, salt, baking powder and flour. Mix on high for 5 min, until fully combined.
Add the chocolate chips and zest and mix.

Spoon the batter into medium sized muffin cups until ¾ full.
Bake  for 15 minutes or until a tester comes out clean.
Remove from oven and leave to cool.

For the ganache, heat the cream in the microwave until hot and add the slabs of chocolate in chunks, mixing it through the hot cream until melted. Refrigerate until set.

With an electric hand mixer, whip the ganache until you have a spreadable consistency.
Spread the ganache over the cupcakes and top with zest and spun sugar.
