Lamb cutlets wrapped in Prosciutto

Ingredients (6)

8 lamb — cutlets
3 Tbs fresh chillies — 573
lemon — juice only
freshly ground black pepper — to taste
8 prosciutto — or Parma ham, sliced
8 fresh rosemary — sprigs

Method:

Season the lamb cutlets with olive oil, lemon juice and pepper. Place a sprig of rosemary on each one and wrap with a strip of Prosciutto.

Refrigerate for about 20 minutes to allow flavours to develop. Braai over medium coals until the Prosciutto is nice and crisp, but the lamb is still pink and juicy.

Serve with minted pea mashed potatoes.
