White balsamic chicken with shallots and vine tomatoes

  • MARINADE:
  • 1/3
    cup
    white balsamic vinegar
  • 1/4
    cup
    olive oil
  • juice and zest of 1 lemon
  • 1
    garlic clove, crushed
  • 4
    chicken breast fillets
  • 1
    Tbs
    olive oil
  • 1
    Tbs
    butter
  • 8
    small shallots, halved
  • 1
    Tbs
    brown sugar
  • 500
    g
    vine tomatoes
  • sea salt and black pepper
  • Italian parsley for garnishing
 

Method

Place the marinade ingredients in a shallow bowl and whisk to combine. Marinate the chicken for 10 min.

Heat oil in a pan, fry the chicken for 5 min on each side or until cooked through. Remove, keep warm.

Add butter to the pan, toss in shallots, cook until tender then add sugar. Cook another minute. Toss in tomatoes and reserved marinade and cook a further 2 minutes. Season to taste.

Drizzle pan juices over chicken and serve with shallots and tomatoes.
