Ingredients (8)

1 taco shells
45 ml readymade salsa sauce
1 canned mixed beans — rinsed and drained
1 canned whole-kernel sweetcorn — rinsed and drained
fresh coriander — handful, chopped
Tabasco sauce
salt and freshly ground black pepper
200 g cheddar cheese — grated

Method:

1. Heat the taco shells according to the packet instructions.

2. Mix the salsa sauce, beans, corn, most of the coriander (reserve some for the garnish) and Tabasco sauce and sea-son with salt and pepper. Spoon into the taco shells, sprinkle the cheese over, garnish with the reserved coriander and serve.
