Vegetable bites with tomato and basil salad

    tub ready-made spinach, feta and potato bites (or any other ready-made balls like falafel, or if you
  • SALAD:
  • 1
    punnet mixed baby tomatoes, left whole or halved
  • 1
    cucumber, peeled or cut into julienne strips
  • 2
    spring onions, cut into julienne strips
  • handful
    of black olives, pitted
  • one round of feta cheese
  • handful
    of fresh basil, to garnish
  • 30
    balsamic or cider vinegar
  • 125
    olive oil
  • pinch of sugar
  • 1
    small clove of garlic, crushed
  • 20
    finely shredded fresh basil
Servings: Change Serving


Mix the ingredients together. Add a little salt and freshly ground black pepper. Pour over the salad just before serving or serve on the side.

To Serve:

Warm up the ready-made bites according to the instructions on the packaging. Put them onto a platter along with the salad ingredients or serve as individual portions with the salad. Garnish with fresh basil.
