Thai-style beef stiry fry with peanuts and basil

Ingredients

    ml
    sunflower oil
  • 1
    medium onion, halved and sliced
  • 25
    ml
    red-curry paste
  • 400
    g
    beef steak, finely sliced
  • 125
    ml
    coconut milk
  • 150
    g
    mangetouts or green beans, halved
  • 45
    ml
    roasted peanuts, roughly chopped
  • half a packet fresh basil
 

Method

10 mins
 
Heat the sunflower oil in a large, heavy-based frying pan or wok. Fry the onion until browned, then stir in the curry paste and cook for 2 minutes while stirring. Add the beef and cook for about one minute, stirring continuously.

Add the remaining ingredients and stir-fry until the beef is cooked through. Serve at once on a bed of rice or noodles.
