    pork fillet, sliced
  • Oil, for frying
  • 2
    garlic cloves
  • 5
    cm
    piece of ginger, peeled & grated
  • 1/2
    cup
    store-bought sweet chilli sauce
  • 5
    g
    fresh mint leaves
  • NOODLES:
  • 200
    g
    rice noodles
  • 5
    g
    fresh mint
  • 5
    g
    coriander leaves
  • Sesame oil, for drizzling
 

Method

Place the pork in a bowl and season well.

Heat oil in a pan, add pork. Sauté until golden brown. Remove, set aside.

Place garlic and ginger in the pan, sauté until golden. Add sweet chilli sauce and ¼ cup water, return the pork to pan, cook for 5 minutes or until cooked through. Remove from heat. Toss in mint and set aside.

For the noodles:

Place noodles in a bowl, cover with hot water for 5 minutes, drain. Toss through with mint and coriander; drizzle with sesame oil.

To serve:
Serve the sliced pork on a bed of noodles.
