Spicy beef with peanuts and basil

Ingredients

    sunflower oil
  • 1
    medium onion, halved and sliced
  • 25

    red-curry paste
  • 400

    beef steak, finely sliced
  • 125
    ml
    coconut milk
  • 150
    g
    mangetouts or green beans, halved
  • 45
    ml
    roasted peanuts, roughly chopped
  • half a packet fresh basil
 

Method

Heat the sunflower oil in a large, heavy-based frying pan or wok. Fry the onion until browned, then stir in the curry paste. Add the beef and cook for about one minute, stirring continuously.

Add the remaining ingredients and stir-fry until the beef is cooked through. Serve at once on a bed of rice or noodles.
