Roast pork in spicy tomato sauce on pasta

    left-over roast meat (preferably pork), shredded or roughly chopped
  • 1
    onion, finely chopped
  • 2
    garlic cloves, finely sliced
  • 1
    tsp
    smoked paprika
  • 2
    tins chopped tomatoes
  • 1
    Tbs
    tomato paste
  • 1
    Tbs
    sugar
  • 2
    tsp
    chilli flakes
  • salt & pepper to taste
  • 500
    g
    pasta, cooked al dente
 

Method

5 mins
 
In a large pot, fry the onion and garlic until soft and translucent.

Add the smoked paprika and fry for another minute before adding the chopped tomatoes and tomato paste.

Add the sugar and chilli flakes and allow to simmer uncovered for 5-10 minutes.

Add the meat and allow to simmer for another 5 minutes.

Season to taste and serve over the cooked pasta.
