Ready-in-minutes pork stir-fry

Ingredients

    g
    leg of pork, excess fat trimmed
  • salt and pepper to taste
  • 10

    vegetable oil
  • 5
    ml
    ground ginger
  • 1
    cloves
    garlic, crushed
  • 2
    medium green peppers, cut into strips
  • 2
    Granny Smith apples, halved, pips removed and sliced
  • 45

    soy sauce
  • 15
    ml
    corn starch
 

Method

1 Cut the pork into thin strips and season with salt and pepper. Heat the oil in a large frying pan and stir-fry the ginger and garlic for 30 seconds.

2 Add half the pork to the frying pan and stir-fry for 5 minutes or until golden brown and cooked Remove from the frying pan and stir-fry the rest of the pork and remove when done.

3 Stir-fry the green peppers and apples in the pan for 5 minutes or until slightly brown.

4 Mix the soy sauce and corn starch in a bowl until well combined. Stir the mixture into the fried peppers and apples, add the pork and heat through for 2 minutes or until the ingredients are well combined and the sauce thickens. Serve immediately with noodles or rice.
