Combine rub ingredients; rub all over pork. Allow to stand for 10 minutes.
Heat oil in a large, heavy-based pot, brown pork, add tomatoes and stock, cover; simmer for 2 hours, uncover, simmer 30 minutes more.
When totally cool, remove pork from pan, shred with a fork, add juices to a pot, stir through pork. Reheat gently.
Fill taco shells with pork, add chopped tomato, feta, avocado and coriander. Serve immediately.
