Preheat the oven to 210°C. Place two baking trays in the oven to heat.Drizzle ¼ cup olive oil over pizza bases. Top with potato slices, sprinkle with cheese and thyme, and drizzle with 2 tbsp olive oil. Remove hot trays from the oven and sprinkle with flour, then place pizzas on them. Return to the oven and bake for 10 minutes.To serve: Scatter with thyme and season well.
