Porcini pasta

    fresh porcini's
  • 50
    g
    butter
  • 10
    g
    olive oil
  • 5
    g
    thyme (picked off the stalk)
  • 50
    ml
    cream
  • 10
    g
    grated parmesan
  • 125
    g
    (Tagliatelle works very well)salt and pepper to taste
 

Method

20 min
 
Cut porcini into slices.

Heat oil and butter in a wide pan.

Add the porcini and cook on a low heat until the mushrooms are brown.

Add the thyme and deglaze the pan with the cream.

Cook for 5 minutes until the sauce starts to thicken. Season with salt and pepper and add grated parmesan, then stir through to melt.

Cook pasta and toss through the sauce while it is still hot.
