Pan-fried chicken with garlic and peppers

Ingredients

    olive oil
  • 4
    chicken breast fillets, halved horizontally
  • 1
    onion, halved and sliced
  • 1
    clove of garlic, crushed
  • 2
    large peppers, sliced
  • 150
    ml
    chicken stock
  • 50
    ml
    cream
  • fettuccini, to serve
  • basil, to serve
 

Method

20 mins
 
Heat the olive oil in a large frying pan. Add the chicken fillets and brown on both sides. Remove the chicken and set aside.

Add the onion and sauté for one minute over medium heat. Add the garlic and sauté for another minute. Add the peppers and sauté for two more minutes.

Add the chicken to the pan along with the stock. Cover and simmer for five minutes. Remove the lid, add the cream and season to taste. Leave to simmer for another five minutes. Serve on a bed of pasta with fresh basil.
