Beetroot pickle:Grate or use a julienne peeler to shred the beetroot and apple. Toss well with the onion, vinegar and sugar.Ostrich patties:Mix the mince, breadcrumbs and parsley together well. Season with salt and pepper. Shape into large flat patties to fit into a pita bread. Grill on an oiled hot griddle pan.
