Juicy meatballs with pumpkin mash

    cumin seeds

    coriander seeds

    fresh parsley, chopped

    egg, whisked
  • 125
    ml
    oats
  • 1
    kg
    peeled pumpkin cubes, boiled
  • 2
    Tbs
    butter
  • 2
    ml
    ground cinnamon
  • 400
    g
    lean beef or ostrich mince
 

Method

15-20 min
 

Preheat the oven to 200 °C. Line a baking sheet with foil and grease with oil.

1 Meatballs Heat a dry pan and toast the cumin and coriander seeds until fragrant. Grind the seeds with a mortar and pestle.

2 Mix the spices with the rest of the ingredients, seasoning well with salt and pepper.

3 Roll out 5 cm meatballs, arrange on a plate, cover with clingfilm and chill for 15-30 minutes.

4 Arrange the meatballs on the prepared baking sheet and roast for 15-20 minutes or until golden brown and done.

5 Mash Mash the cooked pumpkin with the butter and cinnamon and season with salt. Serve the meatballs with the mash and fresh herbs.
