Fish fillets coated in polenta with baby leeks

Serve with leeks, garlic, watercress, baby potatoes and lemon wedges.

Ingredients

 
  • 4x 200
    g
    firm sustainable fish fillets
  • 1
    cup
    polenta
  • grated zest of 1 lemon
  • 2
    Tbs
    flatleaf parsley, chopped
  • sea salt flakes and pepper
  • 1
    egg, beaten
  • 1/4
    cup
    butter, melted
  • 230
    g
    packet of baby leeks
  • 4
    cloves
    garlic
  • 2
    Tbs
    olive oil
  • TO SERVE:
  • watercress
  • baby potatoes, boiled or roasted
  • lemon wedges

Method

 
Preheat oven to 180°C.

Combine polenta, lemon zest and chopped parsley.

Dip seasoned fish into beaten egg, then coat with the polenta mixture.

Place fish on a lined baking tray and drizzle with butter. Place leeks and garlic next to the fish and drizzle with olive oil. Bake for 15 minutes until golden.

Serve with leeks, garlic, watercress, baby potatoes and lemon wedges.
