Ingredients (19)

MARINADE
30 ml soy sauce — light
10 ml mirin or sherry
5 ml cornflour — maizena
STIR-FRY
60 ml canola oil
4 dried chillies — deseeded and chopped
30 ml garlic — cloves, crushed
30 ml fresh ginger — grated
3 spring onion — chopped
125 ml soy sauce
30 ml vinegar — rice
1 yellow or red pepper, cut into strips
1 carrot — peeled and cut into matchsticks
150 g cabbage — shredded
350 g noodles — egg
to serve — to serve
50 g peanuts — roasted, chopped
onion sprouts or 2 spring onions, chopped

Method:

1. Chicken: Cut the chicken into strips and transfer to a marinating dish.

2. Marinade: Mix the ingredients, add to the chicken and marinate for 15 minutes.

3. Stir-fry: Heat half the oil in a wok and stir-fry the chicken with the chillies until just done. Remove from the wok.

4. In the same wok, heat the rest of the oil, add the garlic and ginger and stir-fry until fragrant. Add the spring onions, soy sauce and rice vinegar and bring to the boil. Add the vegetables and stir-fry until done but still firm. Mix in the chicken and noodles and heat through.

5. To serve: Serve in bowls topped with the chopped peanuts and onion sprouts or chopped spring onions
