Beef satay stir-fry

    canola oil
  • 400

    tenderised steak, cut into strips
  • 1
    red pepper, seeded and cut into pieces
  • 500

    chopped cabbage
  • 3
    medium carrots, peeled and sliced
  • 200

    green beans, trimmed and halved
  • 10
    ml
    each grated ginger and garlic
  • 1 to 2 chillies, chopped (and seeded if preferred)
  • 100
    ml
    soy sauce
  • 30 to 50ml peanut butter
  • egg noodles and fresh coriander, to serve
 

Method

Heat half the oil in a wok and add the beef strips. Brown well, then remove and set aside.

Heat the remaining oil and add the vegetables, ginger, garlic and chillies. Stir-fry for 3 to 4 minutes.

Mix the soy sauce and peanut butter together and add to the wok along with the beef and the juices in the bowl. Stir to combine all the ingredients well. Season to taste. Serve with egg noodles and fresh coriander.
