Vegetable pasta

  • Courgettes
  • Yellow pepper
  • Baby tomatoes - halved
  • A handful of
  • A handful of
  • Mushrooms
  • 3
    tomato pesto
  • Olive oil for frying
  • Parmesan shavings
  • Salt and pepper


Chop vegetables very finely.
Cook pasta according to the instructions.
Flash fry in pan along with the herbs and pesto (do not fry for longer than a few minutes).
Put veggies on top of the pasta and sprinkle with parmesan shavings.
Season to taste.
