Vegetable fritters

Ingredients

  • 1/4
    onion chopped finely
  • 3/4
    cup
    self raising flour
  • 1/2
    cup
    milk
  • 1
    egg beaten
  • 1/2
    cup
    cooked spinach
  • 1/2
    cup
    butternut
  • 1/2
    cup
    sweetcorn kernels
  • seasoning and herbs of your choice
  • oil/butter to fry
 

Method

Chop the onion.
Sift the flour into a bowl
Add the milk and whisk.
Add the beaten egg and whisk until combined.
Stir in the onion and the leftover veggies.
Season
Heat a thick bottomed frying pan or skillet.
Add a little oil and butter & melt.
I drop a tablespoon of the mixture at a time, frying maybe 3 or 4 at once, I made 16 fritters.
Don’t have your pan too hot, you need the fritters to brown and cook all the way through.
