Thai seafood curry

    Packet Thai green curry sauce
  • 400
    fish fillets - cubed (or other firm fish)
  • 200
    prawns - cleaned and peeled
  • 6
    spring onions - thickly cut
  • 50
    fresh coriander - roughly chopped
  • cooked basmati rice - to serve


Empty the curry sauce into a saucepan and heat gently for five minutes.

Add the fish and prawns and continue to simmer gently for 10 minutes. Stir occasionally, but be careful not to break up the fish cubes.

Just before serving, stir in the spring onions and coriander. Serve with basmati rice.
