Spinach, feta and bacon quiche

    rindless bacon, chopped

    baby spinach, washed
  • 150

    feta cheese, crumbed
  • 3
    eggs
  • 250
    ml
    milk
  • 125
    ml
    sour cream
  • 15
    ml
    lemon juice
  • 60

    Parmesan cheese, grated
  • 3
    ml
    mustard powder
  • 3
    ml
    salt
  • Freshly ground black pepper to taste
  • 2
    ml
    mixed dried herbs

Pre-heat oven to 160 °C.

For the pastry:

Mix all ingredients to a soft pastry in a food processor. Press into base and sides of a 24cm rectangular quiche dish.

filling:

Fry bacon until crisp. Remove and keep aside. Add butter to pan, then add spinach and fry until wilted. Spoon bacon and spinach onto base. Sprinkle feta cheese over spinach layer.

Beat eggs, milk, sour cream and lemon juice together. Add Parmesan cheese, mustard powder seasoning, and mixed dried herbs pour onto base.

Bake for 45 minutes.
