Spicy mince stir-fry

An easy stir-fry with fresh spices and vegetables.

Ingredients

 
  • 50
    ml
    oil
  • 2
    cloves garlic, crushed
  • 10
    ml
    grated ginger (or half as much ground)
  • 10
    ml
    dried crushed chillies
  • 400
    g
    lean beef mince
  • 2
    carrots, peeled and diced
  • 30
    ml
    soy sauce
  • 4
    spring onions, sliced
  • 300
    g
    cabbage, shredded
  • 200
    g
    small green beans trimmed

Method

 
Heat oil in a large frying pan or wok. Add garlic, ginger and chillies and stir-fry for 30 seconds.

Add mince and carrots. Cook over medium-high heat, stirring, for about 8 minutes, until cooked through.

Stir in remaining ingredients and continue to stir-fry for 3 minutes.

Season with salt and freshly ground black pepper, to taste.

Serve with rice or noodles.
