    oil

    onion, halved and sliced

    grated ginger
  • 1
    garlic clove, crushed
  • 1
    carrot, sliced into rings
  • 1
    red pepper, cut into strips
  • 1
    chilli, seeded and chopped
  • 10
    ml
    masala
  • 5
    ml
    ground cumin
  • 2
    ml
    ground cinnamon
  • 1
    ml
    ground nutmeg
  • 200
    ml
    water
  • 5
    ml
    vegetable or chicken stock powder
  • 1
    can (410 g) sugar beans, drained
  • 1
    can (410 g) red kidney beans, drained
  • 5
    ml
    salt
 

Method

Heat the oil in a large pan and sauté the onion until soft.

Add the ginger and garlic and stir-fry for 2 minutes.

Add the carrot, red pepper and chilli and stir-fry for 2 minutes.

Add the spices and stir-fry for another minute.

Add the water and stock powder and bring to the boil.

Cover and simmer for 15 minutes.

Add the beans, season with salt and heat through.

Serve with fresh ciabatta bread.
