Salmon wraps

    flour tortillas
  • 2
    100g portions salmon
  • olive oil
  • 1
    baby Gem lettuce
  • 4
    purple salad onions, sliced
  • FOR THE DRESSING:
  • 4
    anchovies, roughly chopped
  • 1
    garlic clove, minced
  • juice of 1 small lemon
  • 1
    Tbs
    olive oil
  • 1/2
    cup
    mayonnaise
  • 1/4
    cup
    finely grated Parmesan
  • 1
    Tbs
    hot water
  • sea salt and black pepper
 

Method

Preheat the oven to 180ºC.

Brush the salmon with olive oil and bake for 5–7 minutes, or until cooked to your liking. Remove from oven and set aside.
To make the dressing, blitz ingredients together in a blender until smooth.
To assemble, toast the wraps in a dry frying pan, spread with some dressing, top with Baby Gem leaves, purple salad onions and a portion of salmon. Roll and slice.
