Roast pork with salad

    pork belly
  • 60
    ml
    oil - for rubbing
  • 2
    Tbs
    cumin seeds - toasted
  • 10

    sea salt - for rubbing
  • 200
    g
    Mint, Feta And Pea Salad: fresh peas, blanched
  • 4
    courgettes - cut into thin ribbons and blanched
  • 200
    g
    feta - crumbled
  • 6
    spring onions - sliced
  • 1
    tsp
    grated lime zest
  • 4
    Tbs
    lemon juice
  • 125
    ml
    extra-virgin olive oil
  • 2
    Tbs
    fresh mint
  • 5
    ml
    salt and freshly ground black pepper
 

Method

Preheat the oven to 220°C. With the point of a sharp knife, score the pork skin at 1,5cm intervals.

Lay the belly on a roasting rack. Rub all over with oil, cumin seeds and salt.

Roast for 30 minutes. Turn heat down to 200°C and roast for another 30 minutes or until pork is cooked to your liking.

Slice and serve with pea salad.

Mint, Feta And Pea Salad: Combine all the ingredients and chill until ready to eat.
