Mushroom pasta

Ingredients (9)

400 g black mushrooms — torn
3 garlic — cloves, finely chopped
2 Tbs fresh thyme
3 Tbs vinegar — white balsamic
1 pnp finest extra-virgin olive oil — glug
1 butter — knob
250 g pasta — tagliatelle
60 ml parmesan cheese — grated
1 salt and freshly ground black pepper

Method:

Preheat oven to 190ºC. Toss the first 6 ingredients in a roasting pan and roast for 15 mins.

Cook pasta according to packet instructions. Drain, reserving ¼ cup cooking liquid. Toss pasta and cooking liquid with mushrooms, pan juices and Parmesan.

Serve immediately, scattered with extra Parmesan.

More good ideas:

Add a handful of toasted pine nuts.

Replace balsamic vinegar with a tablespoonful of lemon juice and grated lemon peel.
