Pork fillet with honey and ginger

    pork fillet- cubed
  • 2
    cloves garlic- crushed
  • 15
    ml
    fresh ginger- finely shredded
  • 30

    sunflower oil
  • 30
    ml
    lemon juice
  • 60
    ml
    honey
  • 45
    ml
    soy sauce
  • 300
    g
    baby green beans- topped and tailed
  • 7
    ml
    cornflour
  • 45
    ml
    sherry
 

Method

Place pork cubes, garlic and ginger in a bowl and set aside for 5 minutes.

Heat oil in a wide, heavy-based or cast-iron frying pan over high heat and fry pork for 2 minutes on each side.

Remove and set aside. Add lemon juice, honey, soy sauce and green beans to pan and cook for 3 minutes, or until beans are done to taste.

Mix cornflour to a paste with sherry and add to pan with pork. Heat until sauce is slightly thickened and glossy.

Serve with fragrant rice.
