    butter

    onion, chopped
  • 300

    pork neck or fillet, cut into small cubes
  • 25

    seasoned flour
  • 500
    g
    pumpkin, cut into small cubes
  • 1
    large potato, peeled and cut into small cubes
  • 1
    can
    chopped tomatoes
  • 250
    ml
    chicken stock
  • 50
    ml
    dry white wine (or more stock)
  • 5
    ml
    fresh thyme (or 2ml dried), plus extra to garnish
  • white rice, cooked, to serve
 

Method

Heat the butter in a pot and sauté the onion until soft. Remove and set aside.

Dust the pork with the flour. Increase the heat and brown the pork in batches.

Return the onion to the pot along with all the remaining ingredients. Bring to the boil, reduce the heat and simmer covered for 25 minutes or until the vegetables are cooked. Add a little more water if necessary. Season to taste and serve with rice, garnished with fresh thyme.
