Peanut sesame chicken

    olive oil
  • 4
    chicken breasts- roughly chopped
  • 250-300
    g
    rice or egg noodles
  • 2
    cup
    broccoli- roughly chopped
  • 1
    red bell pepper- deseeded and chopped
  • 2
    Tbs
    fresh coriander- roguhly chopped
  • 1
    Tbs
    sesame seeds
  • 1
    Tbs
    flaked almonds- toasted (optional)
  • 3
    Tbs
    sesame oil
  • 1
    large clove garlic- finely chopped
  • 3
    Tbs
    soy sauce
  • 6
    Tbs
    sweet chilli sauce
  • 2
    Tbs
    smooth peanut butter
  • juice of 2 limes

Heat the olive oil in a wok or pot and brown the chicken pieces until lightly golden on all sides.

Meanwhile, in two separate pots, cook the noodles and broccoli for 4-5 minutes. Drain both and set aside.

While the chicken, broccoli and noodles are cooking, whisk together the ingredients for the sauce and set aside.

Pour the noodles into a warmed serving bowl, add the chicken and broccoli, drizzle with the sauce and then add the red pepper, coriander, sesame seeds and toasted almonds (if using). Serve immediately in warmed bowls.

Note: Add the sauce just before serving, as it tends to get absorbed by the noodles and can become dry.
