Peanut butter chicken sosaties

    chicken breasts, cubed
  • 5
    grated ginger
  • 5
  • 50
    chunky peanut butter
  • 100
    sweet chilli sauce
  • 25
    lime or lemon juice
  • 5
    grated lime or lemon zest
  • 15
    finely chopped fresh coriander
  • cellophane noodles, cucumber strips and peanuts, to serve
Servings: Change Serving


Preheat oven to grill.

Mix all the marinade ingredients together and season to taste. Stir in the chicken pieces and marinate for 20 minutes.

Thread two or three strips of chicken onto long wooden sosatie sticks that have been soaked in water. Place the sosaties on a baking tray and grill for three minutes per side.

Serve the sosaties with the cellophane noodles, cucumber strips, chopped coriander and peanuts.
