Peach, feta and pecan salad with honey

    ripe dessert peaches, washed and cut into segments
  • 2
    fresh watercress
  • 1
    Danish feta
  • 1
    chopped pecan nuts
  • salt and black pepper to season
  • honey to serve


In a saucepan, heat the butter and gently fry the peaches until they start to colour and caramelize. Set aside.

On a salad plate, arrange the fresh watercress, top with peaches, crumbled feta cheese, nuts and drizzle with honey. Season.
Serves two as a main.
