Pasta with sun-dried tomatoes

Ingredients

  • 500
    g
    tagliatelle, fettucine, spaghetti or pasta shells
  • 250
    ml
    grated butternut
  • 1
    clove garlic, crushed
  • 2
    spring onions, finely chopped
  • 1
    green pepper, seeded and finely chopped
  • 250
    ml
    sun-dried tomatoes
  • 2
    ml
    dried thyme
  • 15
    ml
    olive oil
  • salt and freshly ground black pepper to taste
 

Method

Cook the pasta with the butternut, garlic, spring onions and green pepper for the cooking time stipulated on the pasta packet.
Drain and transfer to a serving dish.
Add the remaining ingredients, mix well and serve.
