Ingredients

    oat bran
  • 50
    g
    brown sugar
  • 60
    ml
    raisins or finely chopped dried fruit
  • 12
    ml
    baking powder
  • 5
    ml
    salt
  • 315
    ml
    low-fat milk
  • 2
    eggs-whisked (or 2 egg whites, whisked)
  • 25
    ml
    oil
  • 60
    ml
    fruit spread or jam (any flavour)
 

Method

Preheat the oven to 200°C. Grease the base of a 12-hollow muffin tin.

Combine all the dry ingredients in a bowl.

Blend the milk, eggs and oil together stirring well.

Add to the dry ingredients and mix lightly.

Fill each hollow in the muffin tin with the mixture up to 3/4 full. Top each with a teaspoonful of fruit spread and top this with more muffin mixture.

Bake for 15 - 20 minutes or until done and golden brown on top.
