Mince and sweetcorn pie

Ingredients (14)

FILLING
1 tomatoes — peeled, grated
1 onion — finely chopped
500 g beef mince — lean
125 ml milk
45 g oats
7 ml salt
freshly ground black pepper — pinch
CRUST
125 ml milk
2 eggs — extra-large
30 ml oil
30 ml cornflour
10 ml Baking powder
1 ml salt
410 g sweetcorn — creamed, tinned

Method:

Blend all the ingredients for the filling in a large microwave-proof dish.

Microwave for 7 minutes, uncovered, on 100 per cent power. Stir well every 2 minutes.

Turn the mixture into a round 24 x 5 cm microwave-proof dish.
Blend all the ingredients for the crust, except the sweetcorn.

Beat well and add the sweetcorn.

Pour the sweetcorn mixture over the filling.
Place the dish on an upturned saucer in the microwave.

Microwave for 25 minutes, uncovered on 70 per cent power until the crust is done.

Serve hot with a green salad.
