Light seafood pasta

Ingredients

    tagliatelle pasta
  • 45
    ml
    olive oil
  • 1
    small onion - finely chopped
  • 1
    stick celery - finely chopped
  • 3
    cloves garlic - crushed
  • 150
    ml
    dry white wine
  • 900
    g
    mixed seafood (calamari, prawns, mussels etc.)
  • 25
    g
    butter
  • 45
    ml
    freshly chopped parsley
  • 1
    lemon - finely grated rind
 

Method

Cook the pasta according to packet instructions.

Meanwhile, heat the oil in a saucepan and sauté the onion, celery and garlic until soft. Add the wine and bring to the boil.

Allow to reduce, then add the seafood. Cover and cook for 3-5 minutes, until seafood is cooked through.

Add the butter and cook until melted, then add the parsley and lemon rind.

Serve immediately with the pasta.
