Ingredients

    kg
    lamb braai rib, cut into individual ribs
  • 125
    ml
    braai sauce
  • 10
    ml
    peri-peri sauce
  • 2
    ml
    finely grated fresh ginger
  • 2
    ml
    salt
  • 30
    ml
    Worcestershire sauce
  • 30
    ml
    soy sauce
 

Method

30 mins
 
Place the ribs in a dish, blend all the ingredients and pour over the ribs. Marinate overnight or for at least 6 hours.

Turn on the oven grill or braai.

If using the oven:
Place the ribs on the rack of an oven roasting tin and grill for 7-10 minutes for medium rare meat, or 10-12 minutes for well done meat. Baste frequently with the marinade.

If braaiing:
Place on a medium heat braai and cook for about 10 mins turning every now and again for medium rare, or 15-20 for well done.

If you want tender fall-off-the-bone, cook on a medium to low heat for 40-1 hr turning occasionally.
