Healthy quinoa with stir-fried vegetables

    quinoa, rinsed
  • 30
    sunflower oil
  • 1
    red onion, halved and sliced
  • 2
    garlic, crushed
  • 1
    medium sweet pepper, sliced
  • 2-4
    courgettes, cut into pieces
  • handful snow peas
  • 250
    shredded red cabbage
  • 50
    chopped cashew nuts
  • 15
  • 45
    light soy sauce
  • 15
    chia seeds
Servings: Change Serving


Cook the quinoa according to the instructions on the packet.

Heat the oil in a wok or large frying pan. Add the onion and garlic and fry for 30 seconds. Add the peppers, courgettes and snow peas and fry for about one minute. Add the cabbage, nuts, honey and soy sauce and fry until the cabbage is wilted, but still crunchy. Serve on a bed of quinoa and sprinkle with chia seeds if you have.
